The poultry industry has had a growth in recent years, allowing to consolidate in the Colombian economy, and make a fundamental contribution in the production of protein of animal origin, of great importance for the communities most in need. The Veterinarian plays an important role in this industry, being responsible for health, management, increased productivity and cost reduction. In addition to ensuring animal welfare. An insufficient fasting in birds that come to benefit, generates a storage of food in the crop, proventricle and gizzard, and during evisceration is lost by not having been assimilated, which leads to great economic losses for companies. A fast prior to the benefit generates a significant impact on channel performance. According to Resolution 242 of 2013, Art. 18, which specifies the operating requirements for poultry benefit plants in Colombia, the following is indicated: "3.1 The birds that enter the beneficiation plant must be kept in good conditions. of controlled fasting avoiding the subsequent contamination of the carcass.3.2 The fasting time for the birds should be 6 to 12 hours. This time must be registered. " When they are not contemplated and evaluated, there will be negative effects that impact on the chickens when the fasts are insufficient or prolonged. This business practice aims to perform an analysis that supports the decision to reduce the presentation of this situation, through the assessment of fasting in gizzards.

La industria avícola, ha tenido un crecimiento en los últimos años, permitiendo consolidarse en la economía colombiana, y hacer un aporte fundamental en la producción de proteína de origen animal, de gran importancia para las comunidades más necesitadas. El Médico Veterinario juega un papel importante en esta industria, al ser responsable de la sanidad, manejo, aumento de la productividad y reducción de costos. Además de velar por el bienestar animal. Un ayuno insuficiente en aves que llegan a beneficio, genera un almacenamiento de alimento en el buche, proventrículo y molleja, y durante la evisceración se pierde al no haber sido asimilado, lo que conlleva a grandes pérdidas económicas para las empresas. Un ayuno previo al beneficio genera un impacto importante sobre el rendimiento en canal. Según la resolución 242 de 2013, Art. 18, donde se especifican los requisitos de funcionamiento para plantas de beneficio de aves de corral en Colombia, se indica lo siguiente: “3.1 Las aves que ingresen a la planta de beneficio se deben mantener en condiciones de ayuno controlado evitando la posterior contaminación de la canal.3.2 El tiempo de ayuno para las aves debe ser de 6 a 12 horas. Este tiempo debe estar registrado”. Cuándo no son contemplados y evaluados se presentarán efectos negativos que impactan sobre los pollos cuando los ayunos son insuficientes o prolongados.
