Currently in Colombia, Sacha inchi is cultivated in the department of Putumayo and there are proposals for implementation in the Catatumbo Norte area of Santander. Objective: to develop a flour for human consumption based on Sacha inchi with probiotic microorganisms. Materials and Methods: an experimental study where 716.7 grams distributed in four treatments each in triplicate was taken to determine the viability before a food matrix, was structured in six phases, ranging from the analysis of the quality of the seeds to the bromatological and microbiological characterization of the formula made with residual cake flour from Sacha inchi. Results: an average was observed for each of the physical characteristics of the seed; length: 1,515 cm, thickness: 0.69 cm and 15 width: 1.3 cm; In the same way, the yield of the residual cake of the seed was highlighted, with a percentage of 52%, this cake showed in the microbiological analysis gradual results of moisture, protein, ash, fat, fiber, carbohydrates and caloric heat, in the same way it was possible to denote non-growth and the absence of microorganisms in the microbiological analysis performed.
